Stuffed Sweet Peppers

This recipe is just amazing.  I’m getting very excited just thinking about it!  I have a baking dish full of stuffed peppers in the oven and the wait is agonizing.  In my mind’s eye I can see the tart goat cheese melting over hearty beef, rice and vegetables… mingling with sweet brown sugar, acidic apple cider vinegar and tangy tomato sauce to create a creamy, dreamy, palate-pleasing sauce.

“Allergic Girl” teaches how to eat without allergies

There is an excellent article on CNN.com this morning that you absolutely must read!  “Allergic Girl” Sloane Miller discusses her strategy for dining out with food allergies.  I love her “Cheers” approach to working with restaurant managers.  When you have food allergies and want to dine out in public it really does take a willingness to call ahead and develop a repoire with the restaurant. 

I have noticed that more and more restaurants are jumping on the food allergy bandwagon and are not only capable but more than happy to prepare allergen-free meals.  It is in their best interest to accommodate customers with special food requests, as the presence of food allergies continues to rise in the population.  So get out there, all you allergics, and meet your restaurant managers!!!

Autumn Squash Bread

True to my promise I am posting a recipe that will help use up some of that leftover autumn squash.  This bread only calls for 1 cup of cooked squash, but you’re definitely going to want to double the recipe… it goes fast!

Corn Muffins

The weather is starting to get cold already.  I can’t believe it!  Late August in Iowa is usually characterized by hot, sticky days and pricey electric bills that come with cranked-up air conditioning units.  This August there has been no such thing.  I have been sitting comfortably outside watching butterflies dance above still-green fields in their frivolous orange, yellow and black costumes. In the evenings I have been cozy under my quilt while a cool breeze wafts in through the window and frogs sing a shimmering melody that seems to echo under a dark blue blanket of night.  In a word… this late summer has been perfect.

With the cool weather comes my annual passion for heart-warming recipes that always make me feel at home.  Last week I decided to try a new corn bread muffin that is (you guessed it) gluten-free!  I wanted this corn muffin to be special.
