Holy Crap… it’s Gluten-free! (Onion Rings)

I’ve decided to start a new series of recipe posts entitled “Holy Crap… it’s Gluten-free!” for all of those moments when you just can’t believe that someone came up with a gluten-free version of that particularly seductive culinary indulgence you thought you’d never taste again.  

Today I had a “Holy Crap… it’s Gluten-free!” moment when I was accomplishing many productive tasks (aka watching the Food Network) and I witnessed Tyler Florence preparing an onion ring recipe with rice flour.  The only small substitution I had to make was switching the beer for gluten-free beer… SO EASY.

Not-Your-Average-Veggie-Burger

The forecast is beautiful for our Labor Day weekend in Iowa and I am going to take advantage of the weather and grill out.  Special thanks to Matt for making these delicious burgers for my family!  For a gluten-intolerant who gets bored with plain bun-less burgers, these festive veggie burgers are a tasty, flavorfull change of pace!

Best. breakfast. ever.

So, Barnes and Noble is having a bargain discount sale which means that I came home with more cookbooks that I really didn’t need.  The great thing about these sales is that there are usually plenty of excellent ethnic cuisine books on sale for under $10.  I made out like a bandit and brought home new Chinese and Indian cookbooks for my collection.  I would estimate that at least 90% of the recipes in both books are gluten-free because both traditional cooking styles call for heavy use of rice flour, cornstarch (Chinese), chickpea flour and potato flour (Indian).  

But bragging about my recent bookstore surge is besides the point… today I discovered the best. breakfast. ever.

Gluten Free and Fabulous!

I came into work yesterday morning and was bombarded by coworkers asking if I had seen the gluten-free spot on WHO 13 News. Excited, I searched the WHO 13 website and watched the news spot.

I was delighted to see that there is a Des Moines company selling gluten-free products nationwide! The company is called Gluten Free and Fabulous and supposedly, they have an incredibly delicious pizza crust. I can’t wait to pick one up at HyVee and try it!

Lost in the Mountains

I am lost in the Rocky Mountains, dear readers, and I am loving it!!!

I am currently sitting in a cozy coffee shop in downtown Estes Park, Colorado enjoying a cup of mint tea and free wi-fi.  Oh, free wi-fi, how do I love thee?  Let me count the ways…… um, LOTS.

I am camping on the outskirts of Rocky Mountain National Park and have little or no connection to society in general.  It is a beautiful thing, dear readers.  Unfortunately, that also means that I have few opportunities to update GlutenFreeGarden.com with scrumptious gluten-free recipes.  

I am returning to civilization on Saturday, and I will share some delicious gluten-free camping fare that has sustained my family and I through a week of rugged, seriously awesome hiking.  You’d never believe it, but I summited a freaking mountain yesterday!!!  I owe all of my success to my gluten-free meatball recipe. :)

I’ll be back online with more gluten-free love and lots of photos this weekend!

Avocado Toast

Breakfast can be difficult when you are gluten intolerant.  There are very few gluten-free breakfast options that are quick and easy.  My family came up with this recipe for the days when we’re running behind and want a quick, nutritional breakfast that is tasty, too.

The Long-awaited Gluten-free Bread!

Well, I have to apologize for being MIA the past few weeks.  I was experiencing technical difficulties with the website deleting every post I wrote when I clicked the publish button.  VERY frustrating.  

To make amends, I am finally posting the long-awaited and much requested gluten-free bread recipe.  This recipe is the end product of hours of testing and baking and eating.  My mom slaved away in the kitchen to develop a gluten-free bread recipe that was acceptable to our discerning palates (read: a recipe that doesn’t suck).
